
As I love baking, and today is one of those days you have to crave comfort food (it's white outside) I'll start with a bake: brownies. I'm not a fan of brownies, as they tend to be quite dry, but we are going to see some friends tomorrow and Boyfriend suggested to bake them, with some alcohol, so here is the recipie for... Rum Brownies:
Ingredients:
1/2 a cup of butter (today I'm using soya spread)
100grs of dark chocolate
1 2/3 cups of sugar
1 1/4 cups of flour
2tbsp of rum
1tsp of vanilla essence
1/2 tsp of baking powder
same of salt
3 eggs
Baking:
Melt the butter and the chocolate together on a low heat. Then pour it onot a bowl and add the rest of the ingredients in order, and combine. Put the mixture in a rectangular tin, greased or lined with greaseproof paper, and put it in the oven, at 180 degrees C for 20/25 minutes.
For the frosting:
2 cups icing sugar
1/4 cup butter
1 tsp rum
1-2 tbsp milk
Beat together butter, rum, and milk until smooth. Slowly mix in icing sugar until smooth. Icing should be light and fluffy. Spread evenly over the cake, once its cold. You can either do it in this way or cut the cake into squares and then put the icing individually.
The cake is very easy to bake, although I have to say the batter is very sticky so, in terms of cleaning and scooping it out of the bowl, is a bit of a nightmare. I also used the hand mixer to smooth the batter as it seemed to have some lumps. But again, a bit of a mess as half of it ended up on the beaters!

The brownies were very nice but I would say eat them the same day you bake them or the day after, otherwise they start going dry. I would put less rum on the icing as I think it was very strong but a bit more on the cake mix as I didn't notice it on the ones without icing.
